quick "homemade" marinara sauce

Yep, there are times when even I, "Queen of No Boxes or Cans in my Recipes" succumb to time management and exhaustion issues (but no one but us has to know) lol Here is my alternative to 8 hours of cooking down marinara sauce and no one is the wiser.

Ingredients

  • 2 cans hunts tomato sauce
  • 1 can hunts crushed tomatoes
  • 2 cans hunts tomato paste (small cans)
  • 4 caps - sherry
  • 1/3 cup brown sugar, lightly packed
  • 4 teaspoons malt vinegar
  • 2 tablespoons olive oil, extra virgin
  • 1/2 - vidalia onion, carmelized
  • 2 cans sliced mushrooms (small cans)
  • - salt & pepper to taste
  • SEASONINGS
  • 4 - bay leaves
  • 1 teaspoon oregano, dried
  • 1 teaspoon basil, dried
  • 1 teaspoon roasted garlic, minced

How To Make quick "homemade" marinara sauce

  • Step 1
    Heat olive oil in a cast iron skillet and then add garlic, basil, oregano and mushrooms. Cook until slightly brown.
  • Step 2
    Add paste and heat through.
  • Step 3
    Add tomatoes, sauce, sherry and sugar, heat through while stirring.
  • Step 4
    Stir in vinegar, onions, salt and pepper until well mixed.
  • Step 5
    Stir in seasonings, then simmer for 30 - 45 mins, covered and stirring every few minutes to keep from sticking.
  • Step 6
    Remove bay leaves and serve hot over your favourite pasta with cheese of your choice.
