- 1 can 14 oz. can coconut milk
- 1/2 teaspoon salt
- 1 tablespoon curry powder
- 1 teaspoon ground coriander
- 1/4 - 1/2 teaspoon cayenne
- 1/4 cup smooth peanut butter
- 2 tablespoons brown sugar
- 1 lime, juiced
How To Make quick & easy coconut curry sauce

Step 1Mix all ingredients until well blended and place in a saucepan - cook over medium heat and bring to a boil.

Step 2Lower the heat and simmer, stirring occasionally, until the sauce thickens - approx. 10 minutes.

Step 3Serve over roasted vegetables or meat of your choice.
