poultry essentials: excellent wing dipping sauce
I posted a chicken wing recipe the other day, and as is my wont, I came up with a new dipping sauce. A lot of times the sauces are a bit pedantic (nothing to write home about), but in this case it turned out pretty good. At least if you can trust the tastebuds of my guests. Easy/Peasy to make and great as a dipping sauce for chicken wings, or other things to nosh on. So, you ready… Let’s get into the kitchen.

- PLAN/PURCHASE
- THE SAUCE
- 1 cup filtered water
- 1/2 cup fresh clover honey
- 1/4 cup tamari sauce or liquid aminos
- 3 tablespoons toasted sesame oil
- 3 tablespoons mirin
- 1 tablespoon chopped ginger
- 1 tablespoon dehydrated garlic
- 1/4 teaspoon red pepper flakes, or to taste
- THE SLURRY
- 3 tablespoons cornstarch or arrowroot powder
- 3 tablespoons filtered water

Step 2You will need a saucepan to make this recipe.

Step 3The Slurry A slurry is basically a liquid (water stock), mixed with an equal amount of a thickening agent (flour, arrowroot power, cornstarch). When added to a soup, stew, sauce, it thickens the liquid. The more you add, the thicker it gets.

Step 4Gather your ingredients (mise en place).

Step 5Add the sauce ingredients to a saucepan and bring up to a simmer.

Step 6Make the slurry and mix until combined.

Step 7Add to the simmering sauce.

Step 8Simmer until the sauce thickens, about 3 – 5 minutes.

Step 9PLATE/PRESENT

Step 10Serve while nice and hot, and dip away. Enjoy.
