This is a great sauce for mopping a nice smoked pork brisket and having some at the table when served. You could use this in a variety of situations; however, I think that it is best on pork products. So, you ready… Let’s get into the kitchen.

- PLAN/PURCHASE
- STAGE I
- 2 tablespoons coconut sugar
- 1 tablespoon ancho chili powder
- 1 tablespoon paprika, mild or hot, your call
- 1 tablespoon dried sage
- 2 teaspoons mustard powder, i prefer, coleman’s
- 2 teaspoons ground cumin
- 1 teaspoon salt, kosher variety, fine grind, or to taste
- 1/4 teaspoon cayenne powder, or to taste
- STAGE II
- 1 1/2 cups strong hot, hot coffee
- 1 cup ketchup, homemade, if possible
- 4 ounces lite beer
- 3 tablespoons fresh clover honey
- 1 tablespoon tamari sauce, or liquid aminos
- STAGE III
- 1 medium yellow or white onion, roughly chopped
- 8 ounces raw bacon, chopped
- 3 cloves garlic, rough chopped
- 1 tablespoon worcestershire, homemade if possible
- 1 tablespoon lemon juice, freshly squeezed

Step 3Storage of homemade condiments and spices Because homemade spices and condiments do not contain any preservatives, it is important to store them properly. Non-reactive (glass) containers with tight-fitting lids are a must. If I am making a dry spice, I love to use old spice bottles that I have run through the dishwasher. If I am doing homemade sauces, I love using Weck jars. They are all glass, come in all sizes and shapes, and have excellent leakproof lids. If you shop online, you can go to Amazon, and type in “Weck Jars” and you will find a ton of them. Dry spices should be kept in a cool space, away from sunlight (spice cabinet), and sauces, in most cases, should be stored in the fridge. If properly stored, this sauce should last 2 – 3 months.

Step 4Gather your ingredients (mise en place).

Step 5Whisk the Stage I ingredients together in a large saucepan. Add the Stage II ingredients and mix to combine. Make sure the coffee is really hot. Add the Stage III ingredients and mix together

Step 6Place the saucepan over medium-low heat, and slowly simmer for about two hours, covered.

Step 7Allow to cool for a bit, then add to a blender, and blend until smooth.

Step 8Store in a non-reactive container in the fridge until needed.

Step 9PLATE/PRESENT

Step 10Use as you would any AWESOME BBQ sauce. Enjoy.
