These are a little bit spicy and a little bit sweet. You can adjust the amount of sugar to your taste. And these are still perfectly good without the chiles.

Ingredients
- 1 red onion, thinly sliced
- 1 jalapeno pepper, sliced
- 1/2 cup apple cider vinegar
- 1/2 cup water
- 3 tablespoons sugar
- 1 teaspoon kosher salt
How To Make pickled red onions

Step 1Place the sliced onion and serrano chile in a bowl.

Step 2In a small saucepan, combine the vinegar, water, sugar, and salt. Bring to a boil, stirring until sugar and salt are fully dissolved.

Step 3Layer onions and chiles in a pint jar. Push down to fit. Pour the hot pickling syrup into the jar. Tamp down the onions. Place wadded up paper towels or parchment paper in the jar, to fully submerge the onions. Cover with a lid.

Step 4Let steep until room temperature - about 45 minutes. Remove the paper from the jar. Ready to eat!
