This pesto is very easy to make, and versatile. Use over pasta, in soup, in potato salad, mix in with other ingredients to stuff chicken...the possibilities are endless.

1Put all but cheese in blender. Blend smooth with on/off for about 5 min. Put into bowl, add cheese and adjust seasonings. Serve over pasta. Or use for dressing for potato salad, mix with rice and nuts for chicken stuffing, over poached vegetables, or to flavor soups. Can stay tightly covered in fridge up to 3 months.
