Ingredients

4 largeshallots, peeled and coarsely chopped

1 cfresh thyme, minced

1/4 cflat leaf parsley, stemmed and chopped

2 Tbspshado beni/culantro, minced or *fresh* cilantro leaves

1 mediumonion, peeled and coarsely chopped

4 clovegarlic, peeled

1/2 tspblack pepper

1/2 tspcoarse or kosher salt

2 Tbspwhite vinegar
How to Make Paramin Green Seasoning
- Place all the ingredients in the bowl of a food processor or blender and puree. If you need to add a bit more vinegar—amount 1 teaspoon at a time--to achieve a smooth, somewhat liquid paste. Store in a sealed container in the refrigerator for up to 1 week.
