  • 1 Tbsp
  • 1 c
  • 3 Tbsp
    gruyere cheese (or swiss cheese) grated
  • 1 Tbsp
    parmesan cheese, grated
  • 1/2 tsp
    dijon mustard

How to Make Mornay Sauce for Crepes


  1. Melt the butter in a small saucepan.
  2. Remove from the heat and add the flour, stirring with a wire whip.
  3. Return to a moderate heat.
  4. Add the milk gradually, stirring the mixture constantly until the sauce is thickened.
  5. Add the remaining ingredients, and salt and pepper to taste.
