I needed 1 tsp of lemon paste for a recipe and rather than paying an arm and a leg for a whole jar of lemon paste, I found a recipe that I decided to try. The original recipe used 6 lemons, and the proportion to sugar was not correct. I only had one lemon, so here's my attempt...

Ingredients
- 1 lemon
- 1/3 cup sugar
How To Make lemon paste

Step 1Cut lemon in half and add to pot of boiling water (about 1 cup water). Boil until tender.

Step 2Remove from heat and let cool. Add lemon and liquid to tall container and whiz with an immersion blender until completely blended.

Step 3Strain out large bits. Stir in sugar. Pour into a parchement lined baking pan. Bake in oven at lowest heat for several hours until thickened

Step 4If you want to leave the pan out in the sun for several hours instead of in the oven, make sure it is covered to prevent the inclusion of extra protein (i.e. insects)!
