I didn't really care for the taste of canned enchilada sauce, and went searching the internet for a good enchilada sauce recipe. This recipe has been adjusted using help from various recipes I found. The first time I made it I fell in love with it...I won't go back to canned enchilada sauce again!

Ingredients For jeanine's enchilada sauce

  • 1 stick
    butter
  • 6-7 Tbsp
    flour
  • 4 Tbsp
    chilli powder
  • 2 tsp
    cumin
  • 2 tsp
    onion powder
  • 2 tsp
    garlic powder
  • 1/4 tsp
    ground red pepper
  • 1/8 tsp
    black pepper
  • 2 tsp
    dried cilantro
  • 6 c
    beef broth
  • 2 Tbsp
    apple cider vinegar
  • 2 tsp
    cocoa powder
  • 1/2 tsp
    dried oregano
  • 1 Tbsp
    brown sugar

How To Make jeanine's enchilada sauce

  • 1
    Make a roux with butter and flour. Whisk until smooth. Meanwhile, have other dry ingredients mixed together and add this to the roux, cooking for 1 minute. Slowly add in beef broth, little by little, stirring constantly. Add vinegar and bring to boil for 1 minute. Reduce heat to simmer and cook for 20 minutes.
