When we were in Jamaica we ate locally and a friend of ours took us to his sister's little restaurant. She let me have this Jerk Rub recipe which she makes weekly.

1 1/2 tsp
allspice, ground
1 1/2 tsp
thyme, dried
1 tsp
curry powder
1 1/2 tsp
paprika, sweet mild
1 tsp
1/2 tsp
kosher salt
3/4 tsp
freshly ground black pepper
1 1/2 tsp
cayenne pepper
1/4 tsp
freshly grated nutmeg
1/4 tsp
cinnamon, ground
1/8 tsp
cloves, ground

How to Make Jamaican Jerk Rub


  • 1Mix together all spices thoroughly and store in an airtight container.
  • 2To use, rub on chicken, pork, or shrimp 15-20 minutes before grilling.
