horseshoe sandwich cheese sauce
One of the favorite items on menus in central Illinois is a "horseshoe" or a "ponyshoe." This consists of a variety of sandwiches, either a hamburger, grilled chicken breast, ham, etc. Whatever you want to put between two slices of toast. Then fresh french fries and all of it smothered with a cheese sauce. This is the best cheese sauce for this. Some like to add beer to this recipe too.

Ingredients
- 1/2 pound butter (2 sticks)
- 2 cups flour
- 1 quart milk
- 1 tablespoon salt
- 1 tablespoon worcestershire sauce
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon dry mustard
- 1 pound cheddar cheese, shredded or a mixture of cheddar and monterey jack
