One of the favorite items on menus in central Illinois is a "horseshoe" or a "ponyshoe." This consists of a variety of sandwiches, either a hamburger, grilled chicken breast, ham, etc. Whatever you want to put between two slices of toast. Then fresh french fries and all of it smothered with a cheese sauce. This is the best cheese sauce for this. Some like to add beer to this recipe too.

Ingredients

  • 1/2 pound butter (2 sticks)
  • 2 cups flour
  • 1 quart milk
  • 1 tablespoon salt
  • 1 tablespoon worcestershire sauce
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon dry mustard
  • 1 pound cheddar cheese, shredded or a mixture of cheddar and monterey jack

  • Step 1
    Mis together in a double boiler so it doesn't stick. Serve over your favorite sandwich and fries.
