Super addictive. Made this by accident when I was trying to make lime curd, and forgot to add the lime. It took a long time, but it developed a wonderful, really rich flavor.

Ingredients

  • 15 large egg yolks
  • 1 1/2 cups honey
  • 2 tablespoons vanilla extract, no sugar in the ingredients
  • 1/4 teaspoon plus a pinch, pink Himalayan salt, or sea salt
  • 1/2 cup plus 1 Tbsp coconut oil

How To Make honey caramel, scd, dairy-free

  • Step 1
    Whisk ingredients together. Heat in a bowl over a double boiler with water in the bottom that doesn’t touch the top bowl. Whisk and heat for a long time, about 1 hour + 20 minutes, until the mixture thickens and coats the back of a spoon with a decent thickness, similar to making lemon curd. The temperature will be about 175° F.
  • Step 2
    Place in a lidded container and cool in the fridge. This will make a thick but somewhat spreadable (when warm enough) caramel-like treat, great on fruit, or for layering in other desserts. Very rich flavor.
  • Step 3
    I like it as a layer on top of the lime curd for a key lime pie-like dessert, topped with berries. Great with apple slices or apple pie.
