Ingredients

  • 10 pounds ripe tomatoes
  • 1/2 - large onion, chopped
  • 1/2 - bell pepper, chopped
  • 1/4 cup olive oil, extra virgin
  • 1 tablespoon parsley
  • 1 tablespoon oregano
  • 2 tablespoons minced garlic
  • 1 tablespoon salt
  • 2 tablespoons sugar
  • 1/4 cup red wine vinegar
  • 12 ounces tomato paste

How To Make homemade spaghetti sauce for canning

  • Step 1
    Blanch tomatoes in boiling water for 1 min. immediately submerge in ice water bath. Peel off skins of tomatoes. Remove seeds.
  • Step 2
    Saute Onion and pepper in oil until tender and onions are translucent.
  • Step 3
    Add tomatoes. Cook in large pot on stove until tomatoes are soft and mushy. Add tomato paste and mash to desired chunckiness.
  • Step 4
    Add spices and boil to desired consistency.
  • Step 5
    Freeze or can in pressure canner for later use. May be used immediately if desired.
