Ingredients
- 10 pounds ripe tomatoes
- 1/2 - large onion, chopped
- 1/2 - bell pepper, chopped
- 1/4 cup olive oil, extra virgin
- 1 tablespoon parsley
- 1 tablespoon oregano
- 2 tablespoons minced garlic
- 1 tablespoon salt
- 2 tablespoons sugar
- 1/4 cup red wine vinegar
- 12 ounces tomato paste
How To Make homemade spaghetti sauce for canning

Step 1Blanch tomatoes in boiling water for 1 min. immediately submerge in ice water bath. Peel off skins of tomatoes. Remove seeds.

Step 2Saute Onion and pepper in oil until tender and onions are translucent.

Step 3Add tomatoes. Cook in large pot on stove until tomatoes are soft and mushy. Add tomato paste and mash to desired chunckiness.

Step 4Add spices and boil to desired consistency.

Step 5Freeze or can in pressure canner for later use. May be used immediately if desired.
