Hollandaise Sauce is good stuff! In my world, you can put it on just about anything, but it's especially delicious in Eggs Benedict, asparagus or SEAfood dishes. :-) I usually double the recipe! The trick is, to keep whisking throughout cooking.

Ingredients
- 3 - egg yolks
- 2 tablespoons lemon juice
- 1/2 cup butter
- 1/4 teaspoon salt
How To Make hollandaise sauce

Step 1Add egg yolks and lemon juice to a double boiler. With wire whisk, beat until well mixed. Place top of double boiler over bottom containing hot (not boiling) water.

Step 2Add a third of the butter to the egg yolk mixture and cook, beating constantly until butter is melted.

Step 3Add another third of butter, beating constantly. Repeat with remaining third, and beat until mixture thickens and is heated through.

Step 4Remove from heat and stir in salt.
