I usually double the recipe!
The trick is, to keep whisking throughout cooking.
How to Make Hollandaise Sauce
- Add egg yolks and lemon juice to a double boiler. With wire whisk, beat until well mixed. Place top of double boiler over bottom containing hot (not boiling) water.
- Add a third of the butter to the egg yolk mixture and cook, beating constantly until butter is melted.
- Add another third of butter, beating constantly. Repeat with remaining third, and beat until mixture thickens and is heated through.
- Remove from heat and stir in salt.
