hawaiian essentials: huli, huli sauce
Huli, Huli sauce is sometimes referred to as Hawaiian BBQ sauce, and I suppose that is true, but I think it is so much more than that. It encapsulates a lot of what would be defined as Hawaiian, and is perfect for traditional pork dishes, as well as chicken and seafood. It can be used as a marinade or as a serving sauce. If you want to add a bit of Hawaiian flavor to your recipes, check this sauce out. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 1 tablespoon olive oil, extra virgin variety
- 3 - 4 cloves garlic, minced
- 1/2 cup ketchup, homemade, if possible
- 1/2 cup coconut or brown sugar
- 1/3 cup pineapple juice
- 1/3 cup tamari sauce or liquid aminos
- 2 tablespoons toasted sesame oil
- 2 tablespoons chili sauce
- 2 teaspoons ginger powder
- 2 teaspoons rice vinegar

Step 2Gather your Ingredients (mise en place).

Step 3Add the oil to a saucepan over medium heat, then add the garlic, and stir until fragrant, about 60 – 90 seconds. Do not let the garlic brown or burn.

Step 4Add the remainder of the ingredients to the saucepan.

Step 5Whisk all the ingredients together and bring them up to a simmer.

Step 6Continue to simmer, stirring occasionally, until reduced by about 20% and begins to thicken, 8 – 10 minutes.

Step 7Allow to cool, then place in a non-reactive container, and store in the fridge.

Step 8The sauce will last 12 – 14 days before it starts losing its flavor.

Step 10Use as a marinade, or a table sauce for pork, beef, chicken, or seafood. Enjoy.
