This simple version of harissa, the classic North African sauce is real quick to make. It can be served as a dip with wedges of Middle Eastern flat bread. As a condiment with couscous and other North African dishes. Or flavoring to spice up meat and vegetable stews.

Ingredients

  • 3 tablespoons paprika
  • 1/2-1 teaspoon cayenne pepper
  • 1/4 teaspoon ground cumin
  • - juice of 1/2 lemon

How To Make harissa

  • Step 1
    Put the paprika, cayenne pepper, ground cumin and 1 cup water in a large heavy pan.
  • Step 2
    Bring the spice mixture to a boil, then immediately remove the pan from the heat.
  • Step 3
    Stir in the lemon juice to taste and allow to cool completely before serving or using.
