  • 4 lb
    ground beef chuck
  • 2 Tbsp
    olive oil
  • 4 medium
    onions, finely chopped
  • 4 can(s)
    tomato paste, 6 ounces each
  • 4
    garlic cloves, minced
  • 1 tsp
    mixed pickling spice
  • 1 c
    dry white wine
  • 1 Tbsp
  • 1
    freshly ground pepper

How to Make Greek-Style Meat Sauce


  1. Using a large frying pan, brown meat in 1 tablespoon olive oil until it loses its pink color.
  2. Transfer to crockery pot.
  3. Add remaining olive oil to pan.
  4. Saute onions until glazed.
  5. Transfer to crockery pot.
  6. Add tomato paste, garlic, pickling spice, (put in a tea ball or tie in a cheesecloth bag), wine, salt and pepper.
  7. Cover.
  8. Cook on low 8 hours.
  9. Stir once or twice.
  10. Cool slightly.
  11. Ladle into freezer containers, or serve hot.
  12. Makes about 3 quarts.
  13. NOTE: This meat sauce is great for various dishes: spaghetti, moussaka, and the greek mararoni dish, Pastitsio.
  14. It is also good spooned over tacos or ladled inside avocado half shells.
  15. This recipe makes a large quantity and freezes well.
