    olive oil
  • 1 small
    onion, chopped
  • 1/2 tsp
  • 3
    garlic cloves, minced
  • 1 small
    green bell pepper, diced
  • 6
  • 12 oz
    tomato puree
  • 6 oz
    tomato paste
  • 2 tsp
    dried oregano
  • 1 tsp
    dried basil
  • 1 Tbsp
    dried parsley
  • 1 tsp
  • 1/4 tsp
  • 1/4 c
    parmesan cheese, grated

How to Make Gina's Basic Spaghetti Sauce


  1. Prepare the tomatoes: drop them into a pot of boiling water for about a minute.
  2. Drain and rinse with cold water.
  3. Slip off the skins, cut out the "core", and coarsely chop.
  4. Set aside.
  5. In a large pot, heat the oil. Add onion and fennel seed.
  6. Fry for a couple of minutes.
  7. Add the pepper and garlic and fry a couple more minutes.
  8. Add the rest of the ingredients.
  9. Bring to a boil, lower heat, then simmer for as long as you can (at least an hour), stirring occasionally.
  10. I cover the pot loosely when simmering.
