Fluffy Seven-Minute Frosting
This frosting is light-as-a-cloud and is much like the meringue you put on a pie. Try it over chocolate, white, yellow or angel food cake.
For an added garnish, sprinkle the top and sides of the frosted cake with coconut like my Mom did.
- 1 3/4 c
- 1/2 c
- egg whites, room temperature
- 1/2 tsp
- cream of tartar
- 1 tsp

How to Make Fluffy Seven-Minute Frosting
- 1In a saucepan, bring sugar and water to a boil. Boil for 3-4 minutes or until a candy thermometer reads 242 degrees (firm-ball stage).
- 2Meanwhile, beat egg whites and cream of tartar in a mixing bowl until foamy. Slowly pour in hot sugar mixture; continue to beat on high for 7 minutes or until stiff peaks form. Add vanilla. Continue beating until frosting reaches desired consistency, about 2 minutes.
