My friend knows I like to collect recipes, and she gave me this one she cut out of the newspaper.

Ingredients For extra tangy tartar sauce

3/4 cmayonnaise (light is ok)

2 Tbspminced shallot (in a pinch onion is ok)

3 Tbspcapers, drained and minced

2 Tbspminced cornichons or any sour pickles

2 Tbspparsley, finely minced

1 tsplemon juice

1/4 - 1/2 tsppepper

1/2 tspsugar or to taste

1 pinchsalt, to taste

1 - 2 dashhot pepper sauce (optional)
How To Make extra tangy tartar sauce

1Combine all ingredients except sugar, salt, and hot sauce (if using). Taste and add pepper, sugar, salt, or hot sauce to your desire.

2Let chill for at least an hour to blend flavors before serving.

3NOTE - I've used dried, minced shallots and let the mixture chill overnight to make sure shallots have softened.
