enchilada sauce
I wanted to use enchilada sauce in a Mexican-style casserole recipe calling for tomato sauce. This was intended to give extra spiciness and some thickness to the sauce. It worked out quite well, based on several different recipes. Most recipes called for a large amount of sauce, so I also cut this one down to the amount that I needed.

Ingredients
- 2 tablespoons olive oil
- 2 tablespoons flour
- 8 ounces can tomato sauce
- 1 1/2 tablespoons chili powder - heat level up to you
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cumin
- 1/3 cup water
- salt & pepper, to taste
How To Make enchilada sauce

Step 1Add olive oil to a medium sauce pan and heat until a little flour sizzles. Then slowly add the rest of the flour while whisking into oil.

Step 2Stir in tomato sauce, spices, and water.

Step 3Heat to boiling, lower heat and stir until thickened. If too thick, add a little more water.

Step 4Taste for salt and pepper.
