With all the great recipes that my Grandma Bush had using tomato soup I had to find an alternative to using canned soup. I have used this with several of her recipes with great success. My husband couldn't tell the difference. Now that is a passed test.

Ingredients
- 3 tablespoons butter, unsalted or olive oil, extra virgin
- 3 tablespoons unbleached white flour
- 1/4 teaspoon kosher salt
- dash freshly ground black pepper
- dash garlic powder with parsley
- dash onion powder
- dash freshly grated nutmeg
- 1 1/4 cups tomato juice, home-canned if available
How To Make diy cream of tomato soup

Step 1Melt butter in a small saucepan over medium heat. Stir in flour and seasonings. Cook over medium heat until it bubbles and the raw flour taste is gone.

Step 2Add tomato juice, stirring with a wire whisk to prevent lumps. Cook until thick.
