diy cream of tomato soup

With all the great recipes that my Grandma Bush had using tomato soup I had to find an alternative to using canned soup. I have used this with several of her recipes with great success. My husband couldn't tell the difference. Now that is a passed test.

yield 1 cup or 1 can condensed soup

Ingredients

  • 3 tablespoons butter, unsalted or olive oil, extra virgin
  • 3 tablespoons unbleached white flour
  • 1/4 teaspoon kosher salt
  • dash freshly ground black pepper
  • dash garlic powder with parsley
  • dash onion powder
  • dash freshly grated nutmeg
  • 1 1/4 cups tomato juice, home-canned if available

How To Make diy cream of tomato soup

  • Step 1
    Melt butter in a small saucepan over medium heat. Stir in flour and seasonings. Cook over medium heat until it bubbles and the raw flour taste is gone.
  • Step 2
    Add tomato juice, stirring with a wire whisk to prevent lumps. Cook until thick.
