This is an easy cheese sauce to make, and it beats the pants off any store-bought variety. I’ve added a few spices to give is a different flavor than your typical cheese dip, and the fun thing is that you can vary the spices to suit your own tastes. So, you ready… Let’s get into the kitchen.

- PLAN/PURCHASE
- 1 teaspoon grapeseed oil
- 1 tablespoon yellow onion, chopped
- 2 ounces sharp cheddar cheese, freshly shredded
- 2 ounces pepper jack cheese, freshly shredded
- 2 ounces colby cheese, freshly shredded
- 1 teaspoon arrowroot powder
- 3 - 4 ounces evaporated milk
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika

Step 2Gather your ingredients (mise en place).

Step 3Add the grapeseed oil to a saucepan over medium heat.

Step 4Add the onions, and then cook until they begin to soften, about 4 - 6 minutes.

Step 5Mix the cheeses together with the arrowroot powder.

Step 6Add to the saucepan and reduce heat to medium low.

Step 7Add the evaporated milk.

Step 8Whisk until the cheese melts and smoothly combines with the evaporated milk.

Step 9Add the cumin, chili powder, and paprika, and continue to mix until all the ingredients are combined.

Step 10Chef’s Tip: If the sauce becomes too thick, you can thin it down with a bit more evaporated milk.
