Ingredients
- 1 cup sugar
- 1 cup water
- 2 cups canned coconut milk
- 6 - egg yolks, at room temp, beaten well
- 2 tablespoons light rum or 1 tsp vanilla (i use vanilla)

Step 1Combine sugar and water in saucepan over high heat, cook, stirring, until sugar dissolves. Keep cooking but don't stir, until syrup is at 230 degrees on candy thermometer. Remove from heat. Whisk in coconut milk, pour about 1/2 c mixture into egg yolks and beat smooth. Whisk, very slowly, back into saucepan so you don't cook the eggs. Put on low heat and cook, stirring constantly until it thickens. This takes about 5 min. Remove from heat, cool a little, stir in rum or vanilla.
