Ingredients

  • 3 tablespoons butter
  • 3 cups button mushrooms, washed and sliced (about 8 oz)
  • freshly ground black pepper, to taste (I always use mixed peppercorns)
  • 3 large cloves garlic, pressed
  • 1 teaspoon dried thyme leaves
  • 2 1/2 cups basic brown sauce
  • 2 tablespoons sherry
  • 1/2 tablespoon Worcestershire sauce
  • 1/2 teaspoon black truffle oil (the real stuff)

How To Make classic mushroom sauce

  • Step 1
Heat butter in a medium skillet over medium heat.
  • Step 2
When it starts sizzling, add mushrooms and season with freshly ground black pepper. Toss to coat and sauté until softened, about 5 minutes.
  • Step 3
Add pressed garlic and sauté for 1 minute.
  • Step 4
Add thyme and basic brown sauce. Stir well, bring to a boil before reducing the heat to medium-low; simmer gently for 15 minutes.

Add sherry, Worcestershire sauce and truffle oil. Stir well and cook for another 5 minutes; taste and adjust seasoning before serving.
