Ingredients
- 3 tablespoons butter
- 3 cups button mushrooms, washed and sliced (about 8 oz)
- freshly ground black pepper, to taste (I always use mixed peppercorns)
- 3 large cloves garlic, pressed
- 1 teaspoon dried thyme leaves
- 2 1/2 cups basic brown sauce
- 2 tablespoons sherry
- 1/2 tablespoon Worcestershire sauce
- 1/2 teaspoon black truffle oil (the real stuff)
How To Make classic mushroom sauce

Step 1Heat butter in a medium skillet over medium heat.

Step 2When it starts sizzling, add mushrooms and season with freshly ground black pepper. Toss to coat and sauté until softened, about 5 minutes.

Step 3Add pressed garlic and sauté for 1 minute.

Step 4Add thyme and basic brown sauce. Stir well, bring to a boil before reducing the heat to medium-low; simmer gently for 15 minutes.

Step 5Add sherry, Worcestershire sauce and truffle oil. Stir well and cook for another 5 minutes; taste and adjust seasoning before serving.
