Taken from The Food of Texas - Authentic Recipes from the Lone Star State by Caroline Stewart. This is delightful served on top of a rib-eye or other nicely grilled beef steak. I love cilantro as well as steak, so I decided I'd better save this!

Ingredients

  • 1/4 cup unsalted butter, room temperature
  • 6 tablespoons fresh cilantro, finely chopped
  • 3/4 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1 teaspoon salt

How To Make cilantro butter

  • Step 1
    Combine all ingredients in a food processor. Pulse until butter is light and creamy.
  • Step 2
    Scoop butter onto a piece of plastic wrap and shape it into a log about 1 1/2 inches in diameter. Chill. Slice to serve.
