Chunky Marinara Sauce

red onion, finely chopped
1 c
celery, diced
1 c
zucchini, diced
1 c
mushrooms, diced
4 c
tomatoes, peeled and diced
1 c
tomato juice
2 Tbsp
tomato paste
2 Tbsp
basil, fresh chopped
1 Tbsp
oregano, fresh chopped
1 tsp
garlic clove, minced
balsamic vinegar


1Dice onion, celery, zucchini and mushrooms into 1/2\" chunks. Saute in balsamic vinegar, about 5 minutes.
2Add tomatoes; blend in tomato juice, tomato paste, herbs and garlic.
3Simmer for 20 minutes, or until sauce is reduced by 1/3.
4Serve over pasta.
