Ingredients

2 Tbsp
butter
1
shallot finely diced
1/2 c
champagne, dry
1 c
heavy cream
salt and pepper

Step-By-Step

1In a sauce pan over medium heat melt butter and sauté shallots till soft and translucent
2Add Champagne and simmer - reduce to half
3Add heavy cream and simmer - reduce to half...add salt and pepper to taste
4Drizzle over fish or steamed vegetables
