  • 2 tablespoons butter
  • 1 - shallot finely diced
  • 1/2 cup champagne, dry
  • 1 cup heavy cream
  • - salt and pepper

How To Make champagne butter sauce

  • Step 1
    In a sauce pan over medium heat melt butter and sauté shallots till soft and translucent
  • Step 2
    Add Champagne and simmer - reduce to half
  • Step 3
    Add heavy cream and simmer - reduce to half...add salt and pepper to taste
  • Step 4
    Drizzle over fish or steamed vegetables
