Found this in an old deleted Reddit post and it sounded like it would be terrific on an omelette.

Ingredients
- 1 tablespoon butter
- 1/2 tablespoon olive oil
- 1 medium yellow onion, sliced thin
- 1/2 teaspoon sugar
- 1/2 tablespoon flour
- 1/2 - 3/4 cups milk or stock
- 1/4 teaspoon Italian seasoning (or use favorite dried herbs)
- 1/8 teaspoon pepper flakes or cayenne
- 1 tablespoon shredded cheese, optional
How To Make caramelized onion sauce
-
Step 1In a large frying pan, melt the butter with the oil over medium-high heat; add the sliced onions then sprinkle the sugar over the onions; cook, stirring occasionally, for about 20-25 minutes until the onions start to darken and become tender.
-
Step 2Lower the heat; sprinkle the onions with flour and stir into the onions. Gradually add the milk or broth (I use water with bouillon) and stir into the onion mixture. Continue stirring until the mixture thickens.
-
Step 3Stir in the herbs and seasonings. Sprinkle with cheese (if using) and stir until it melts.
