This recipe makes a great topping for crostini or sandwiches.

Ingredients

  • 6 slices thick cut bacon or more to taste
  • 2 cups red onion, thinly sliced
  • 2 cups canned whole berry cranberry sauce
  • 1 jalapeno pepper, seeded and minced (can also use pickled jalapeno)
  • - lime juice, to taste
  • 1 - loaf French bread, cut into slices
  • butter, for bread

How To Make caramelized onion and cranberry crostini

  • Step 1
    Slice bread into 1/4 inch slices and butter lightly. Bake at 400 degrees F until golden brown on top and crisp.
  • Step 2
    Cook bacon until crisp and remove to paper towels to drain. Leave approximately 2 Tbsp bacon drippings in the pan and add thinly sliced onions. Cook onions in the pan until caramelized.
  • Step 3
    Crumble bacon and add to the pan along with cranberry sauce. Cook until it thickens, and then add jalapeno and lime juice.
  • Step 4
    Top crostini and enjoy. Leftover topping can be stored in the refrigerator.
