caramelized onion and cranberry crostini

Ingredients
- 6 slices thick cut bacon or more to taste
- 2 cups red onion, thinly sliced
- 2 cups canned whole berry cranberry sauce
- 1 jalapeno pepper, seeded and minced (can also use pickled jalapeno)
- - lime juice, to taste
- 1 - loaf French bread, cut into slices
- butter, for bread
How To Make caramelized onion and cranberry crostini

Step 1Slice bread into 1/4 inch slices and butter lightly. Bake at 400 degrees F until golden brown on top and crisp.

Step 2Cook bacon until crisp and remove to paper towels to drain. Leave approximately 2 Tbsp bacon drippings in the pan and add thinly sliced onions. Cook onions in the pan until caramelized.

Step 3Crumble bacon and add to the pan along with cranberry sauce. Cook until it thickens, and then add jalapeno and lime juice.

Step 4Top crostini and enjoy. Leftover topping can be stored in the refrigerator.
