Have everything ready.
Use a big pot as it boils and foams up.
Melt the sugar over moderate heat stirring vigorously with a wooden spoon. As soon as the sugar starts to boil stop stirring.You can lift pot and swirl the sauce. BE CAREFUL NOT TO BURN.
As soon a s it turns an amber color and all sugar crystals are gone add butter and stir til melted.
Remove from heat...count to 3 an d add cream. Stir til smooth and creamy.
Be careful...ITS HOT!! let cool for a couple on mins. Pour into glass jar.Cool to room temperature and can be stored in fridge. Heat before serving.
