butternut squash sauce
This is a delicate and beautiful sauce that can be used over vegetables, meats, also good in mac and cheese or scalloped potatoes, or over mashed potatoes, and even some salads.... you will find many uses for this sauce...mmm so good.

Ingredients
- 2 tablespoons olive oil
- 2 large green onions,minced
- 1 pound or 2 to 3 cups butternut squash,cut into 1/2 " cubes
- 1/8 teaspoon nutmeg
- 1/4 teaspoon each salt and pepper
- 1 cup chicken broth

Step 1In a large skillet, over medium heat, add the olive oil and onion, saute' 2 to 3 minutes, then add squash, salt, pepper , nutmeg and broth, stir to blend..

Step 2Cover, cook 8 to 10 minutes. When squash is tender, transfer mixture to a deep bowl . Use an immersion blender to puree sauce.
