bourbon whiskey barbecue sauce

This recipe was given to me by a dear friend in Georgia. He canned it as well and gave it to friends. One word of caution, OPEN windows before cooking...The fumes will drive you crazy, but the taste is worth it.

Ingredients
- 1/2 large onion, minced
- four clove garlic, minced
- 3/4 cup bourbon whiskey....your choice of brand
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 2 cups ketchup
- 1/4 cup tomato paste
- 1/3 cup cider vinegar
- 2 tablespoons liquid smoke flavoring
- 1/4 cup worcestershire sauce
- 1/2 cup brown sugar, firmly packed
- 1/3 teaspoon hot sauce

Step 1OPEN DOOR OR WINDOWS BEFORE STARTING>>>In a large skillet over medium heat, combine the onion, garlic and whiskey. Simmer for ten minutes or until the onions are clear. Mix in remaining ingredients.

Step 2Bring to a boil, reduce heat to medium low and simmer for 20 minutes.. Run through a sieve if you prefer a smoother sauce

Step 3You can double and triple this recipe to can it if you like. PLEASE REMEMBER TO OPEN YOUR WINDOWS OR DOOR BEFORE COOKING.. I wish someone had told me. my eyes burned for hours.
