blueberry sauce for steak
I know that blueberry sauce with steak seems a bit unconventional but get ready to have your socks blown off by this heavenly delight! I specifically made this sauce to pair with a Beaujolais-Villages wine that I was working with for a course assignment. My brave "tasting panel" (family and friends) were apprehensive about "blueberry sauce with steak??" but were won over immediately by this delicious little wonder. I sprinkled a few fireweed blossoms and violas (both are edible flowers) from my backyard to bring out the subtle floral notes in the wine. Don't be afraid to be adventurous!!

Ingredients
- 3 cups blueberries (fresh or frozen)
- 3 teaspoons lemon juice
- 2 tablespoons butter
- 2 tablespoons honey
- 1-2 teaspoon salt
- 1 teaspoon freshly ground pepper (i use a peppercorn medley but black pepper is fine)
How To Make blueberry sauce for steak

Step 1Add berries, lemon juice, butter, and honey to a small saucepan. Over low heat, simmer until sauce thickens slightly, about 10-15 minutes.

Step 2Add salt and pepper. Use a potato masher to smooth out the sauce a bit, but remember that you do want a fair bit of texture to the sauce.

Step 3Simmer on low for another 5 minutes and remove from heat. Sauce can be made in advance and reheated. Serve over your favorite steak.
