Ingredients

  • 1 cup onions, chopped
  • 1/2 cup vegetable oil
  • 10 ounces spinach, fresh and chopped
  • 1/2 pound tomatillos, coarsely chopped
  • 4 ounces green chile peppers, chopped
  • 2 - garlic cloves, crushed
  • 1 tablespoon dried oregano
  • 1 cup chicken broth
  • 2 cups sour cream

How To Make basic green sauce

  • Step 1
    Cook and stir onions in oil in a 3-quart saucepan until tender.
  • Step 2
    Stir in remaining ingredients except broth and sour cream; Cover and cook over medium heat for 5 minutes, stirring occasionally.
  • Step 3
    Place mixture in food processor workbowl fitted with steel blade or in a blender container; cover and process until smooth, about 1 minute.
  • Step 4
    Return mixture to saucepan; stir in broth.
  • Step 5
    Heat to boiling; reduce heat.
  • Step 6
    Simmer uncovered for 10 minutes; Stir in sour cream.
  • Step 7
    Cover and refrigerate any remaining sauce.
