Ingredients For ancho chile sauce

  • 8
    whole dried ancho chiles
  • 1/2 c
    onion, minced
  • 3 Tbsp
    garlic, minced
  • 2 c
    chicken stock
  • 2 Tbsp
    corn oil
  • 1/4 tsp
    salt
  • 1 tsp
    sugar
  • 1 tsp
    ground cumin
  • 1/2 tsp
    ground oregano

How To Make ancho chile sauce

    Heat a dry skillet, over a moderate flame. Add chiles and heat until softened. Remove from heat.

    Remove and discard stems, seeds, and pith. Place chiles into a bowl.

    Add boiling water to cover, soak for 1 hour, and drain well.

    Combine chiles, onions, garlic, seasonings, and stock in a food processor and process to a smooth puree.

    Heat oil in a saucepan, over medium. Add the puree and simmer for 3-5 minutes, stirring often.

    Season to taste with salt and pepper.

    Store in a covered container in the refrigerator for about 2 weeks.
