I use this recipe for everything I marinade, including fish. I usually marinate overnight and can be used as an ingredient to gravy after for potatoes

1 bottle beer of choice (personally i use coors)
1 cup southern comfort (or whiskey of choice)
4 dashes bitters
3 cloves pressed garlic
1 small onion- minced
2 tablespoons horseradish sauce
2 tablespoons mustard, spicy brown
2 tablespoons tobassco- optional
- water to cover

How To Make universal marinade

Step 1

Mix all except the water. Dip meat in to coat then add water. Marinate at least three hours.
