This recipe hasn't been tested, but it sound wonderful. I love Rhubarb and thought it would make an excellent sauce for chicken or pork.

Ingredients

  • 1 c
    chopped fresh or frozen rhubarb
  • 2/3 c
    water
  • 1 medium
    onion, finely chopped
  • 1 tsp
    canola oil
  • 1 clove
    garlic, minced
  • 1 c
    ketchup
  • 2/3 c
    brown sugar, firmly packed
  • 1/2 c
    dark corn syrup
  • 2 Tbsp
    cider vinegar
  • 2 Tbsp
    worcestershire sauce
  • 1 Tbsp
    dijon mustard
  • 1 1/2 tsp
    hot pepper sauce
  • 1/4 tsp
    salt

How to Make Rhubarb Barbeque Sauce

Step-by-Step

  1. In a small saucepan, bring rhubarb and water to a boil. Reduce heat; simmer, uncovered for 5-6 minutes or until rhubarb is tender. Remove from the heat; cool slightly.
  2. Place the rhubarb in a blender or food processor. Cover; process until smooth; set aside.
  3. In the same saucepan, saute onion in oil until tender. Add garlic; saute 1 minute longer. Add remaining ingredients.
  4. Whisk in rhubarb puree until blended. Bring to a boil. Reduce heat; simmer, uncovered for 5 minutes. Use as a basting sauce for grilled meats. Store in the refrigerator.
