If you have not figured it out yet, I like to make as many things from scratch as possible; especially, sauces, and soup bases. There are several reasons:
1. They are better for you.
2. They do not contain any unwanted chemical preservatives.
3. You can adjust them to suit your own tastes.

I love drizzling this sauce over a big bowl of ramen noodles.

So, you ready… Let’s get into the kitchen.

Step-by-Step

  2. Gather your Ingredients (mise en place).
  3. Chef’s Note: This recipe will make two cups of teriyaki sauce. If that is a bit much, just cut the recipe in half.
  4. Add the tamari, sake, mirin, and rice wine vinegar to a saucepan.
  5. Whisk in the arrowroot powder.
  6. Add the sugar, and set the heat to medium-low.
  7. Chef’s Note: If you are using any of the optional items, add them in now.
  8. Continue to stir, until the mixture comes to a simmer.
  9. Remove from the heat, and allow to cool.
  10. Place into a non-reactive jar, and store in the fridge until ready to use.
  11. PLATE/PRESENT
  12. Use in your recipes, just like you would any standard teriyaki sauce. Enjoy.
