Mojo is a tart, garlicky sauce that is used to compliment Cuban meals. Great on seafood, vegetables and meats.

Ingredients

  • 1/4 cup olive oil
  • 8 cloves garlic, very thinly sliced
  • 3/4 cup sour orange juice (seville orange) or 1/2 cup lime juice plus 1/4 cup orange juice)
  • 1/2 cup vegetable stock (or broth)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground oregano
  • 1/2 teaspoon ground black pepper
  • - salt to taste
  • 3 tablespoons fresh cilantro chopped (or fresh parsley)

How To Make mojo sauce

  • Step 1
    Heat oil in a saucepan over medium heat. Add the garlic slices and cook for 2-4 minutes, or until fragrant. Watch carefully and do not let the garlic burn.
  • Step 2
    Remove pan from heat and stir in the juice, stock, cumin, oregano, and pepper. Bring the sauce to boil over medium-high heat; then reduce the heat to medium and simmer approximately 3 minutes or until the sauce has mellowed. Season to taste with salt.
  • Step 3
    Remove sauce from heat and allow it to come to room temperature. Once cooled, add the cilantro or parsley.
  • Step 4
    Sauce can be refrigerated in a glass bottle for up to one week. Always shake before using.
