Makes 1 1/2 cups
Ingredients
- 1/4 cup olive oil
- 8 cloves garlic, very thinly sliced
- 3/4 cup sour orange juice (seville orange) or 1/2 cup lime juice plus 1/4 cup orange juice)
- 1/2 cup vegetable stock (or broth)
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground oregano
- 1/2 teaspoon ground black pepper
- - salt to taste
- 3 tablespoons fresh cilantro chopped (or fresh parsley)
How To Make mojo sauce

Step 1Heat oil in a saucepan over medium heat. Add the garlic slices and cook for 2-4 minutes, or until fragrant. Watch carefully and do not let the garlic burn.

Step 2Remove pan from heat and stir in the juice, stock, cumin, oregano, and pepper. Bring the sauce to boil over medium-high heat; then reduce the heat to medium and simmer approximately 3 minutes or until the sauce has mellowed. Season to taste with salt.

Step 3Remove sauce from heat and allow it to come to room temperature. Once cooled, add the cilantro or parsley.

Step 4Sauce can be refrigerated in a glass bottle for up to one week. Always shake before using.
