Really good marinade to use for grilling. Also good for basting. From a handout when I was at Memphis in May Barbecue Festival.

Ingredients

  • 1 1/2 c
    vegetable oil
  • 3/4 c
    lemon juice
  • 3/4 c
    soy sauce
  • 1/2 c
    rose or other dry pink wine
  • 1/4 c
    worcestershire sauce
  • 2 Tbsp
    dry mustard
  • 1 Tbsp
    herb pepper
  • 2 1/2 tsp
    seasoned salt
  • 2 tsp
    fresh parsley, chopped
  • 1/2 tsp
    garlic powder

How to Make Memphis in May Magnificent Marinade

Step-by-Step

  1. Combine the first 5 ingredients in a large jar; cover tightly, and shake vigorously.
  2. Combine the dry mustard, herb pepper, seasoned salt, parsley, and garlic powder; add to the oil mixture. Cover tightly, and shake vigorously.
  3. Use as a basting sauce for chicken or pork during cooking.
