marinade essentials: magic with poultry

Poultry can be a bit on the bland side… but not with these awesome marinades on your side. These are my go-to marinades when I’m looking to spice up some chicken. Use them on breasts, thighs, legs… whatever your pleasure…. Bone in, bone out, skin on, skin off… it doesn’t matter. Choose your marinade, and have some fun. So, you ready… Let’s get into the kitchen.

Ingredients

  • GIVE IT TO ME STRAIGHT
  • 1/4 cup kosher salt
  • 1 quart filtered water
  • KICKING HOT/HONEY
  • 3 tablespoons olive oil, extra virgin variety
  • 1/4 teaspoon salt, kosher variety
  • 1/2 teaspoon white pepper, freshly ground
  • 2 cloves garlic, minced
  • 4 tablespoons fresh clover honey
  • 2 tablespoons chopped chipotles and adobe sauce (canned)
  • MY ITALIAN ANCESTRY
  • 4 tablespoons olive oil, extra virgin variety
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 pinch salt, kosher variety
  • 1/4 teaspoon black pepper, freshly ground
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried marjoram
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried sage
  • A SOUTHERNER’S DELIGHT
  • 3 tablespoons olive oil, extra virgin variety
  • 1/4 teaspoon salt, kosher variety
  • 1/4 teaspoon black pepper, freshly ground
  • 2 tablespoons lime juice, freshly squeezed
  • 1 tablespoon chili powder, mild or hot, your choice
  • 1/2 teaspoon ground cumin
  • 4 tablespoons fresh cilantro, chopped
  • A HINT OF THE EAST
  • 4 tablespoons olive oil, extra virgin
  • 1/8 teaspoon salt, kosher variety
  • 1/4 teaspoon white pepper, freshly ground
  • 2 cloves garlic, minced
  • 1/4 cup coconut sugar
  • 1/4 cup tamari sauce

How To Make marinade essentials: magic with poultry

  • Step 1
    The one exception to a marinade is the first one... that technically is a brine. Brining chicken can make it really juicy, and works in many recipes.
  • Step 2
    For the marinades, mix all the ingredients together and place into a bowl or Ziplock bag, add the chicken and refrigerate for a few hours or overnight. The exception to this is the brine... chicken should only be brined for 2 or 3 hours.
