This is how I make my own Vodka Sauce for pasta, chicken and burgers...you will find many ideas to use this sauce- like lasagna, and spaghetti, etc. Recipe makes about 7 1/2 cups- you can freeze any extra for later use,in freezer containers.

Ingredients

  • 1 large sweet onion, chopped
  • 5 cloves garlic, roughly chopped
  • 3 tablespoons extra virgin olive oil
  • 2 cans 28 oz. ea. of crushed tomatoes
  • 1 1/4 cups vodka, premium quality
  • 2 cups heavy cream
  • 4 tablespoons fresh basil, finely chopped
  • 5 1/2 ounces can tomato paste
  • - salt and pepper to taste

How To Make homemade vodka sauce

  • Step 1
    Sauté onion, garlic and olive oil in a large saucepan or small kettle until translucent. Do not overcook or brown.
  • Step 2
    Add both cans of crushed tomatoes and vodka.
  • Step 3
    Cook 1/2 hour until alcohol has burned off.
  • Step 4
    Add heavy cream and basil. Stir to blend ingredients.
  • Step 5
    Add tomato paste as desired. If you want a thinner sauce, use less tomato paste. Stir to blend. Simmer 1/2 hour.Season to taste with salt and pepper.
