carolina bbq sauce
Since I do not live in the Carolinas, I do not know if this is genuine or not. I am sure someone will be kind enough to tell me as I know BBQ sauce is pretty sacred! It is just the name of the recipe I got from my sister in law. I have tweeked it a bit from hers to suit my own tastes. It is tangy and spicy from the mustard, vinegar, and chipotle seasoning and just a bit sweet. Delicious with pork, beef, or chicken. Can use as a marinade too. My photo.

Ingredients
- 2 cups ketchup
- 1/2 cup spicy brown mustard
- 1/2 cup cider vinegar
- 2/3 cup firmly packed brown sugar
- 2 tablespoons dried, minced onion
- 1 tablespoon worcestershire sauce
- 1/4 teaspoon dried chipotle pepper (i got this at target) or hot pepper flakes
- 3 tablespoons butter or margarine
- - hot sauce of your choice or more chipotle if desired for more heat
How To Make carolina bbq sauce

Step 1Add all ingredients except butter in a heavy saucepan. Stir to combine.

Step 2Cook on very low heat for about 15 minutes stirring occassionally.

Step 3Add butter cut into a few pieces and stir until melted and combined. Let cool to room temperature before serving so flavors can develop.

Step 4Add hot sauce or more chipotle if you would like more heat. Do not omit the step with the butter. It gives the sauce a sheen and richness.
