caribbean jerk marinade
This is one of our favorite marinades for grilled pork chops or chicken. Don't let the amount of ingredients scare you as their combination gives wonderful flavor and it's very easy to make.

Ingredients
- 1 tablespoon minced onions
- 1 - jalapeno pepper, seeds and veins removed (careful they are hot)
- 1 tablespoon allspice
- 1/2 tablespoon ground cloves
- 1/2 - 3/4 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 -1 1/2 teaspoon dried thyme
- 1/4 teaspoon ground black pepper
- 1/2 tablespoon ginger
- 1/4 - 1/2 cup light brown sugar (depending how sweet you want it - i start out with 1/4, then taste
- 1/4 cup lime juice
- 1/4 cup white vinegar
- 1/4 cup orange juice
- 1/4 cup soy sauce (low sodium is fine)
- - minced garlic to taste (2-3 garlic cloves)
- 1 teaspoon kosher salt
- 1/2 cup oil ( i use 1/4 extra virgin olive oil and 1/4 cup canola oil)
How To Make caribbean jerk marinade

Step 1Using a blender, blend on high about a minute or two. In a zip lock bag, add meat and marinade; coat meat well and marinate overnight. Heat grill, remove meat from marinade and place on hot grill. Brush meat with some of the marinade while cooking. Discard any leftover marinade. Do not use again.
