My kiddies love chicken and I needed a way to cook a whole chicken and not have it dry out. The brine flavors but does not over power.

lemons, halved
1 c
kosher salt
3/4 c
brown sugar
1/3 c
garlic cloves, crushed
bay leaves
1/4 c
black peppercorns, whole
jalapeno peppers, seeded
1 Tbsp
dried basil
1 Tbsp
dried oregano
1 Tbsp
dried thyme
1 gal
cold water

How to Make Brine For Roasted Chicken


  • 1Place all ingredients together in container big enough to hold whole chicken and mix well.(I use a 2gallon zipper bag and a bowl big enough to hold it.)
  • 2Rinse whole roasting chicken, be sure to remove giblets and any loose parts from cavity. Submerge in brine for 18 to 24 hours, refrigerated.
  • 3Roast according to usual method.
