brine for roasted chicken
My kiddies love chicken and I needed a way to cook a whole chicken and not have it dry out. The brine flavors but does not over power.

Ingredients
- 3 - lemons, halved
- 1 cup kosher salt
- 3/4 cup brown sugar
- 1/3 cup garlic cloves, crushed
- 3 - bay leaves
- 1/4 cup black peppercorns, whole
- 5 - jalapeno peppers, seeded
- 1 tablespoon dried basil
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 1 gallon cold water
How To Make brine for roasted chicken

Step 1Place all ingredients together in container big enough to hold whole chicken and mix well.(I use a 2gallon zipper bag and a bowl big enough to hold it.)

Step 2Rinse whole roasting chicken, be sure to remove giblets and any loose parts from cavity. Submerge in brine for 18 to 24 hours, refrigerated.

Step 3Roast according to usual method.
