My kiddies love chicken and I needed a way to cook a whole chicken and not have it dry out. The brine flavors but does not over power.

Ingredients

  • 3
    lemons, halved
  • 1 c
    kosher salt
  • 3/4 c
    brown sugar
  • 1/3 c
    garlic cloves, crushed
  • 3
    bay leaves
  • 1/4 c
    black peppercorns, whole
  • 5
    jalapeno peppers, seeded
  • 1 Tbsp
    dried basil
  • 1 Tbsp
    dried oregano
  • 1 Tbsp
    dried thyme
  • 1 gal
    cold water

How to Make Brine For Roasted Chicken

Step-by-Step

  1. Place all ingredients together in container big enough to hold whole chicken and mix well.(I use a 2gallon zipper bag and a bowl big enough to hold it.)
  2. Rinse whole roasting chicken, be sure to remove giblets and any loose parts from cavity. Submerge in brine for 18 to 24 hours, refrigerated.
  3. Roast according to usual method.
