argentine steak sauce - chimichurri
Chimichurri is a traditional accompaniment to steak and other BBQed meats in Argentina. It is also good on sausages, fish, chicken and even on a bowl of chili! It can also be used as a marinade for meats. Most recipes I've found are for large batches. This one is small enough to use up in a few days.

Ingredients
- 1/2 medium onion, finely chopped
- 2-3 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1/2 cup fresh parsley, finely chopped
- 1/2 teaspoon dried oregano (more if using fresh)
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 tablespoon lemon juice
- 2 1/2 tablespoons red wine vinegar
- 1/3 cup olive oil
How To Make argentine steak sauce - chimichurri

Step 1Mix onion, garlic, red pepper flakes, parsley, oregano, paprika, salt and pepper in a bowl of a food processor.

Step 2Add lemon juice and vinegar, then pour in the olive oil slowly while pulsing.

Step 3Use within a few days, or freeze in an ice cube tray. When frozen, pop cubes into a ziplock bag and use as needed.
