I first started using this in Venezuela and when we moved back to the U.S. I wanted to make my own as I did not expect to find it here. I use it in my Arroz con Pollo( Rice with Chicken), which is a Peruvian dish and it really enhances the flavors.

Ingredients
- 3 tablespoons ground coriander seeds
- 1 tablespoon oregano, dried, ground
- 1 tablespoon thyme, dried, ground
- 1 tablespoon salt
- 2 tablespoons paprika, sweet mild
- 2 tablespoons white pepper
- 1 teaspoon cumin seeds
- 1 teaspoon achiote/annatto if available

Step 1Place all ingredients in a mortar and grind to a fine powder with the pestle. Use at your own discretion.
