Ingredients
- 4 pounds small yellow tomatoes
- 2 - lemons
- 1 tablespoon ginger root
- 3.5 pounds sugar
- 1 tablespoon whole mace
How To Make yellow tomato preserves

Step 1Wash tomatoes, and prick each one with a fork.

Step 2Add sugar, 1 lemon sliced thinly, and juice of 1 lemon and mix.

Step 3Tie mace and ginger root in thin cloth bag.

Step 4Add to tomatoes and heat slowly and simmer gently until fruit is transparent.

Step 5Remove tomatoes and boil syrup until thick.

Step 6Add tomatoes and heat to boiling.

Step 7Pour immediately into hot sterilized jars.
