Ingredients

  • 4 pounds small yellow tomatoes
  • 2 - lemons
  • 1 tablespoon ginger root
  • 3.5 pounds sugar
  • 1 tablespoon whole mace

How To Make yellow tomato preserves

  • Step 1
    Wash tomatoes, and prick each one with a fork.
  • Step 2
    Add sugar, 1 lemon sliced thinly, and juice of 1 lemon and mix.
  • Step 3
    Tie mace and ginger root in thin cloth bag.
  • Step 4
    Add to tomatoes and heat slowly and simmer gently until fruit is transparent.
  • Step 5
    Remove tomatoes and boil syrup until thick.
  • Step 6
    Add tomatoes and heat to boiling.
  • Step 7
    Pour immediately into hot sterilized jars.
